

Finishing A Syrup Batch
This year I dispensed of the hydrometer and used the eyeball method called "sheeting" for testing the finished sap. This is in the early stage of sheeting as you can still see a few droplets coming off the sheet as it forms along the ladle. I began removing the syrup slowly at this point and came up with a good average of finished product. I got 8.5 gallons of syrup from 30 trees, quite a nice run as the trees were eager to relent their sap this year.
